Ingredients:

400g of oats

200g mixed nuts (pecans, walnuts, almonds or whatever you fancy)

100g mixed seeds (pumpkin, sunflower, flaxseeds. etc)

100g raisins

2 tbsp coconut oil

2 tbsp maple syrup

2 tsp ground cinnamon

Method:

Place the mixed nuts in a food processor and pulse for about 30 seconds so that they are partially crushed. Then add them to a large mixing bowl with the oats and seeds and stir together.

Next, melt the coconut oil with the maple syrup and cinnamon on the hob, once it has dissolved add it to the bowl of oats and nuts and mix well.

Place the mixture onto a baking tray and bake for about 25-30 minutes at 170C, until crunchy. During this time you’ll need to stir everything to ensure that every bit of the granola gets nicely toasted and the top doesn’t burn.

Once the granola is turning slightly golden remove the tray from the oven and allow it to cool, then stir in the raisins. Store the granola in an air-tight container to keep it lovely and crunchy.

Makes a great breakfast with milk or yoghurt and as a pre-workout snack!
